E allora facciamo i dolci, biscotti, ciambelloni, torte.
Oggi abbiamo provato le tortine di ciliegie e crema.
Una pasta frolla sablé fatta seguendo il metodo Montersino ed una crema pasticciera particolare che ho trovato in un libro comprato in Provenza.
Ingredienti e procedimento per la frolla sablée
- 250 g farina di grano tenero 00 debole
- 150 g burro a temperatura ambiente
- 100 g zucchero a velo
- 40 g tuorli (2 uova)
Procedimento a mano
Procedimento con planetaria
Io ho usato la Kitchenaid.
Nella planetaria con il gancio a foglia lavorate il burro con la farina fino ad avere un composto sabbioso. Aggiungete poi lo zucchero senza montarlo e incorporate le uova una alla volta.
Ingredienti e procedimento per la crema
- 500 ml di latte
- 120 grammi di zucchero semolato
- 1 cucchiaino abbondante di farina
- 40 grammi di maizena
- 2 uova
Versate il latte in una pentola con metà dello zucchero (60 grammi).
Fate scaldare a fuoco medio.
Mettete lo zucchero rimanente (60 grammi), la farina, la maizena e le due uova in un recipiente o nella planetaria.
Sbattere energicamente in modo da ottenere una miscela omogenea.
Quando il liquido sarà giunto a bollore, versatelo sull’altra miscela continuando a girare. Poi riversate il composto nella pentola e fate cuocere a fuoco medio mescolando di continuo.
Quando la crema si addenserà spegnete il fuoco e spostatela in una ciotola a temperatura ambiente, coperta dalla pellicola.
Assemblamento delle tortine di ciliegie e crema
Stendete velocemente la pasta frolla e mettetela negli stampi da tortine aiutandovi con un matterello.
Eliminate gli eccessi di pasta dai bordi e bucherellate il fondo con una forchetta.
Farcite adesso con la crema fino al bordo.
Infornate in forno preriscaldato a 200 gradi e fate cuocere per 40 minuti.
Un volta sfornate, guarnite con le ciliegie e servite.
